課程內容以熱量輸送及質量輸送之理論及相關之操作為主。熱量輸送部分,包括:傳導、對流與輻射。接著介紹與熱量輸送有關之單元操作,包括:沸騰與冷凝、蒸發,以及熱輸送裝置。質量輸送部分,包括:擴散質量輸送與對流質量輸送。接著敘述質量輸送之單元操作,包括吸收與氣提、調濕與涼水、蒸餾、萃取、乾燥、結晶,以及薄膜分離等。

Heat transport part, including: conduction, convection and radiation. The unit operations related to heat transfer are then introduced, including: boiling and condensation, evaporation, and heat transfer equipment. The mass transport part includes: diffusive mass transport and convective mass transport.
